Miso, or Japanese fermented soy paste, offers an umami flavor that is distinctly Japanese. Miso tare is a concentrated sauce that provides this savory flavor for Miso ramen. I love how quick this sauce is to make and the punch of flavor that it brings to ramen or any other dish where it is used.

What is Miso Tare?

All ramen dishes, no matter how different from each other, consist of five components. Those components are the broth, the tare (or sauce), the aromatic oils (or fats), the noodles, and the toppings. Miso tare is one of the five components of miso ramen and is responsible for bringing a strong umami and miso flavor to the dish.

Miso tare is one of the three main types of ramen tares with the other two being shio tare and shoyu tare. Consisting of soy sauce, sake, sugar, and miso paste, miso tare is the quickest of the three ramen tares to prepare.

How is Miso Tare Used?

Miso ramen is the primary sauce used to flavor miso ramen.

Similar to shoyu tare and shio tare, the most common use for miso tare is to bring an umami flavor to your bowl of miso ramen. When I make ramen, I always add each component to the bowl separately. I start with the broth then slowly add the tare, tasting as I go, until I am happy with the final taste of the broth/tare mixture. Most ramen bowls typically require two tablespoons of tare but some thicker broths may require a bit more.

Miso tare can also be used as a sauce on meats, in stir-fry and rice dishes, and as a marinade.

How to Make Miso Tare

As mentioned before, miso tare consists of soy sauce, sake, sugar, and miso paste. When shopping for ingredients, you will quickly find that there are several different types of miso paste. Most chefs prefer the white or yellow miso paste as their flavors are more muted. However, I prefer red miso paste as I prefer the deeper miso flavor. Brown miso paste has the strongest flavor and is often too potent for most.

1. Combine sugar, soy sauce, and sake into a bowl and stir until the sugar is dissolved in the mixture.
