Chicken dumpling soup combines the classic mirepoix veggies of onion, carrots, and celery with shredded chicken, well seasoned chicken broth, and hearty dumplings. A secret to making this soup great is starting with a great chicken broth, as this is the base that brings everything together.

Contrary to many other chicken and dumpling recipes, this recipe is more soup than a stew. Though, the chicken, dumplings, and veggies make it a heartier soup.

How to Make Chicken Dumpling Soup

Given the flavor punch that this soup brings, it’s pretty simple to prepare with most of the time spent simmering at various stages of the cooking process. Below are step-by-step instructions on how to prepare this ultimate comfort dish.

1. Prepare the veggies by dicing the onion, peeling the carrots, slicing the carrots and celery into small pieces, and chopping the parsley. This allows you to quickly add them to the pot when needed.

Cut veggies ahead of time so they can be added to the chicken dumpling soup quickly when needed.

2. Next, add the butter to a large soup pot and melt on medium heat.

Melt butter in the pot on medium heat.

3. Once the butter is melted, add the onion, celery, and carrots to the pot and cook until the onions are translucent (around 10 minutes), stirring frequently.

Add the onions, carrots, and celery to the pot and cook for 10 minutes on medium heat.  This serves as the base for the chicken dumpling soup.

8. After the soup has simmered for 20 minutes, add the chicken and the parsley and mix in. You can also remove bay leaves from the soup at this time.

Add chicken to the soup.

9. Next, add the dumpling dough to the soup in 1/2 teaspoon increments. Once all the dough has been added, cook the dumplings in the soup for five minutes (or until fully cooked).

Add dumplings to the chicken and dumpling soup.

10. Serve and enjoy! Salt and pepper to taste.

  • 2 Bay leaves
  • 2 Cups Cooked chicken Shredded
  • Salt To Taste
  • Pepper To Taste

Dumplings

  • 1 Cup Flour
  • 1/2 tsp. Salt
  • 1/2 tsp. Ground Pepper
  • 3/4 Cup Milk 2% or Whole
