An American classic, vegetable beef soup is one of the most popular soups around, and for good reason. The savory aromas of the beef simmering in a flavorful broth is a sign of wintertime in our house. After years of experimenting with different seasonings, I’ve arrived at a recipe that my whole family looks forward to.

What is Vegetable Beef Soup

Vegetable beef soup consists of seared beef chunks cooked in a seasoned broth with a variety of vegetables. Like most soups, the longer you simmer, the more flavorful it will be. I like to use carrots, potatoes, corn, green beans, peas, and tomatoes. However, feel free to modify to your taste.

How to Make Vegetable Beef Soup

While good soup takes time, this recipe is pretty easy to prepare with most of the time spent letting the soup simmer. I love using my cast iron pot for this recipe, but any large soup pot will work.

1. Add two tablespoons of oil to a large pot and brown beef on medium-high heat. Season with salt and pepper while cooking and add more oil if needed.

2. Once cooked, remove the beef from the pot and place aside until needed.

3. Add another tablespoon of oil to the pot and cook your diced onions on medium heat for two minutes.

4. After the onion has cooked for two minutes, add the carrots and celery and cook for another two minutes, stirring frequently so nothing burns.

5. After the onion, celery, and carrots have cooked for two minutes together, add the garlic and cook for an additional minute.

6. Add the flour and beef broth and stir together until everything is combined.

Add broth to the vegetables to make the base of the vegetable beef soup.

7. Once the broth and flour are combined, add the cooked beef, tomatoes, thyme, basil, soy sauce, Worcestershire sauce, and bay leaves to the soup.

Add tomatoes and spices to the vegetable beef soup.

8. Bring the soup to a boil, reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.

Cover and let the vegetable beef soup simmer, stirring occassionally.

9. After 30 minutes, add the potatoes and cook for another 20 minutes.

Add potatoes to the vegetable beef soup.

10. After the potatoes have cooked for 20 minutes, add the corn, green beans, and peas and simmer for another 20 minutes.

Add the corn and green beans to the vegetable beef soup.

11. Once done simmering, taste and add salt and pepper as needed. This is a VERY important step as an under-seasoned soup will not taste right. Be sure to add small amounts at a time and repeat until you have it how you like it.

12. Garnish with parsley, serve, and enjoy!

Ingredients

  • 2 lbs. Beef stew meat
  • 4 Tbsp. Avocado oil (or vegetable oil)
  • 1 Yellow onion
  • 4 Carrots Medium size
  • 4 Stalks Celery
  • 4 Cloves Minced Garlic
  • 1/2 Cup All Purpose Flour
  • 8 Cups Beef Broth
  • 2 Cans Diced Tomatoes
  • 1 Tbsp. Soy Sauce
  • 1 Tbsp. Worcestershire sauce
  • 2 tsp. Dried Thyme
  • 2 tsp. Dried Basil
  • 4 Bay Leaves
  • 1 1/2 Cups Frozen Corn
  • 1 1/2 Cups Frozen Green Beans
  • 1 1/2 Cups Frozen Peas
  • 1 1/2 lbs. Yellow or Red Potatoes
  • Salt
  • Pepper

Instructions
